Today's Dinner.

Lemon Chicken and Chinese Cabbage with Carrots...

Lemon Chicken Recipe:

1. Marinate chicken with chopped garlic, lemon rind, egg and flour for around 15mins. Add salt and pepper to taste.

2. Fry the chicken until brown/ crispy.

3. Mix lemon juice into remaining batter (should only be left a bit) and add a bit of light soy sauce then pour into the pot that was used to fry chicken. Let it simmer a while.

4. Pour over the fried chicken and serve hot.
